“Coconut milk was often used in Anglo Indian cooking traditions. This rice dish is a wonderful example - the combination of spices and coconut milk gives this rice a beautiful fragrance. Many of the managers in my mother’s catering business were Anglo Indians and would cook this for staff meals and soon it became an item on the catering menu.”
