“The infusion of spices with rice is the basis of almost all pulao in the subcontinent. This rice has the addition of caramelised onions which gives it an added layer of flavour. Pulao were not made everyday at home - it was only made on days when we had more people dining at home as it would go well with any dish, from a delicate seafood dish to a spicy meat dish.”
